Pickles
No matter how many curries there are, there should be a green box next to it. If you eat a couple of lumps of ghee in hot rice and add this much green, the taste will be different. Greens are a must in Telugu meals. Storage sheds are available in every telugu. Various pickles are available in the market. All of them are homemade.
Ingredients
Tomatoes – Arakilo
Fruit Chilli – Arakilo
Chitta Fruit – Small pod
Cumin – One Teaspoon
Garlic Cloves – A pinch Turmeric
– One Teaspoon Salt – Curry leaves
to taste – A pinch Mustard – Half Teaspoon Dry Chillies – Three Oil – Five Tsp
Preparation:
1. Wash and dry the tomato slices without getting wet. Then cut vertically into pieces.
2. Add tomato slices, turmeric and salt to the pan and fry. Cover and cook well.
3. After all the water in the tomatoes has evaporated, add a small lump of tamarind and mix.
4. Close the stove and keep aside till it cools down.
5. Next, wash and dry the fruit and put it in a mixer. Add garlic cloves and cumin and grind it.
6. Add the cooked tomato mixture to it.
7. Grind it finely.
8. Now put oil in a pan for popu.
9. Add mustard seeds, cumin seeds, black pepper and curry leaves and fry.
10. Put this thalampa in the ground greens. That’s it, the tomato, fruit, chilli paste is ready.
11. Keep it in a glass bottle for a year.
